While we do not have a specific public database for production dates by serial number, our knives are recognized by their classic design, carbon steel blades, and brass compression rivets which have remained hallmarks of our heritage for generations.

Most of our iconic cutlery and tools, including many of our classic Old Hickory lines, are manufactured in the USA by the Ontario Knife Company in Upstate New York.

Our knives are made from 1095 carbon steel, which is not stainless. To prevent rust, hand wash and dry your knives immediately after use, and apply a light coat of food-safe mineral or vegetable oil to the blade for protection. Do not put them in the dishwasher, as the heat and moisture will damage both the steel and the hardwood handles.

The darkening you notice on the carbon steel blade is a natural patina that forms over time from contact with acidic foods or general use. This is normal and actually helps protect the steel from corrosion; it is not rust and is a sign of a well-loved, authentic tool.
